THE VINTAGE: Growing conditions in 2012 were nearly perfect. Rocky, volcanic soils characterize the designated vineyard block for the Huge Bear Knights Bridge Vineyard Cabernet. This hillside vineyard enjoys full sunshine and long, warm days, offset by early morning fog and cool, late afternoon breezes.
THE CRAFTING: The clusters were destemmed into stainless steel tanks where they cold soaked for 24 hours. Fermentation was completed in 14 days and the wine was drained and pressed to barrels. The wine aged for 21 months before bottling.
THE TASTING: The resulting wine is robust with aromas of baking spice, dried red fruits, blackberry, cocoa powder, violets, and cedar. The lush palate mirrors the nose with a bright fruit entry and a lingering savory finish.
THE PAIRING: A rich but sturdy wine, this will pair perfectly with traditional meatloaf and mashed-potatoes; pasta with a hearty Bolognese sauce; or a salad with toasted walnuts and blue cheese.
