The Vintage: The 2012 vintage will go down in history as one of the best on record. The conditions were nearly perfect from start to finish: a strong water table in early spring, long warm summer days, and cool dry nights.
The Crafting: After a cool early morning harvest, clusters were de-stemmed to tank and cold soaked for 48 hours. The grapes underwent a 10-day fermentation on the skins with gentle aerating pump overs twice daily. The wine was then drained and pressed, finishing primary and secondary fermentation in new and used Taransaud oak. The wine was aged for 20 months in barrel and an additional eight months in bottle prior to release.
The Tasting: We craft our Ursa Gigantes blend to achieve an intriguing interplay of balanced contrasts. In our Petite Verdot dominant 2012 vintage, notes of sweet dark fruits interweave with smoked meat, licorice, mocha, violets, black pepper, and sweet oak. The palate is broad, layered and balanced finishing with smoky plum, blackberry and flowers.
The Pairing: This wine pairs beautifully with a coffee-rubbed ribeye roast.
