The Vintage: The 2013 growing season offered another drought year, yet it was ideal for grape growing with steady, moderate temperatures and few heat spikes. Warm days and cool nights allowed our fruit a long ‘hang-time’ reaching optimal maturity with balanced, full flavors.
Crafting: Our Cabernet Franc was harvested in the very early morning hours of October 20th. The cool fruit was destemmed and transferred to tank for fermentation on the skins. After fermentation, the wine was drained, pressed and moved to barrels. Using 60% new French oak barrels, the wine was aged 21 months before bottling and then cellared for an additional 15 months before release.
The Tasting: Aromas of cherry, violet, currant, licorice, and pepper leap from the glass and are followed by notes of cocoa. On the palate the aromas carry forward, accompanied by red fruits, plum, and hints of roasting spices. Oak notes, a bright acidity, and balanced tannins integrate to offer a long, full finish.
The Pairing: With both fruity and savory notes, our Cabernet Franc will pair well with sausage and mushroom pizza; a traditional lasagna; or pasta with roasted vegetables.
