The Vintage: Overall, the growing season in 2016 was textbook, which helps create extraordinary grapes. A little bit of rain during the spring lead to smaller berries and clusters. The summer months brought moderate weather which contributed to slow ripening, full flavors, and intense aromatics.
The Crafting: Our Sauvignon Blanc was picked and hand-sorted in mid-September and then pressed whole cluster. After allowing the juice to cold settle, it was racked to stainless steel barrels for fermentation. After fermentation, the wine remained in stainless steel to age for six months before bottling.
The Tasting: Our vibrant 2016 Sauvignon Blanc delivers enticing floral notes of jasmine and honeysuckle, pear, sweet citrus, and a wet-sand minerality. The bright aromas follow on the palate and are joined with hints of tropical fruit, citrus zest, and stone fruit. A full mouthfeel finishes clean, refreshing, and balanced.
The Pairing: The 2016 Huge Bear Sauvignon Blanc has an acidity that is very food friendly. We suggest a salad with arugula, persimmon, and goat cheese; baked chicken with a light mushroom cream sauce; or a goat cheese and leek galette.
