THE VINTAGE: The 2012 vintage was one of the more idyllic growing seasons on record. The warm days and cool nights continuing into late September allowed fruit to ripen evenly and slowly, with a long hang-time providing maturity and complexity. This 100% Cabernet Sauvignon is a lush wine reflective of our mineral rich soils and 22 year-old hillside vines.
THE CRAFTING: Harvested in the early morning, the fruit was brought to the winery cold for destemming. Fermentation with the skins lasted approximately 7 days. The wine was then drained and pressed to barrels to finish primary and secondary fermentation. The wine was aged in 75% new Taransaud oak barrels for 18 months.
THE TASTING: The aroma of our 2012 Huge Bear Sonoma County Cabernet Sauvignon is filled with lush fruits, baking spices and a hint of mint and fresh autumn leaves. On the palate, there is a big middle mouth with notes of cocoa, minerality, fruit cobbler and a touch of spice. There is a subtle acidity to the wine, with well integrated yet lingering tannins.
THE PAIRING: A well-balanced wine, our 2012 Huge Bear Cabernet Sauvignon is a nice accompaniment to grilled meats or short ribs on a bed of polenta.
