VINTAGE: The 2012 vintage will go down in history as one of the best on record. The conditions were nearly perfect from start to finish: a strong water table in early spring, long warm summer days, and cool dry nights.
THE CRAFTING: The fruit was harvested from 21-year-old vines on September 28. The grapes were pressed cold and cold-settled for 48 hours. The clear juice was racked to French oak and stainless-steel barrels, where it experienced primary fermentation and partial (29%) malolatic fermentation. We aged the wine on its lees for 10 months in French oak.
THE PAIRING: The tropical aromatics, rich mid-palate, and hints of brininess on the finish make this wine a wonderful match with Hawaiian pulled pork.
