2013 Huge Bear Cabernet Sauvignon Knights Valley

THE VINTAGE: Although 2013 was another year of drought, Knights Valley once again enjoyed a great vintage. Throughout the growing season, temperatures were consistent and moderate, with long warm days and cool nights. Few heat spikes allowed the hillside fruit to gain complexity and intensity before it was harvested in early October.

THE CRAFTING:  Harvested in the early morning of October 3rd, the fruit arrived at the winery cold for destemming. Fermentation lasted 10 days and the wine was drained, pressed, and transferred to barrels. A combination of 70% new and one-year old French oak was used for aging. After 21 months in barrel the wine was bottled and cellared for an additional 24 months.

THE TASTING: This robust Cabernet Sauvignon is selected from a specific block on the Knights Bridge vineyard, and bolstered by just a touch of Petit Verdot. Aromas of red currant, blackberry, plum, and cedar abound in the glass. These notes are followed on the palate accompanied by licorice, baking spices, and dark berry compote flavors. The dusty, yet gentle tannins lead to a sweet, powerful finish. This rich Cabernet is drinkable now, but will age for many years.

THE PAIRING:  This is a robust wine ready for heartier dishes. Suggested pairings include spice rubbed steak; lamb meatballs; root vegetables; or a flatbread with savory cheese and caramelized onions.
