THE VINTAGE: While the 2013 growing season was another drought year, it was yet another great vintage. Temperatures were consistently moderate with few heat spikes, allowing the fruit from our 23 year-old vines the opportunity to reach optimal maturity and balance before harvest in early October.
THE CRAFTING: The grapes were harvested in the early morning and arrived to the winery cold. They were destemmed to tank where fermentation was immediately started. Fermentation lasted 10 days on the skins with gentle aerative pumpovers twice a day. The wine was then drained and pressed and allowed to finish in new and used Taransaud and Ermitage barrels. The wine was aged for 22 months in barrel and another nine months in bottle.
THE TASTING: The lush notes of cocoa, black cherries, and leather on the nose carry through in the mouth, accented by sweet oak and dark fruit. The palate rounds out with robust tannins and a smooth finish.
THE PAIRING: A traditional pot-roast and vegetables, a lamb-burger with Stilton cheese, or pasta with a rich Bolognese are perfect accompaniments to this bold wine.
