THE VINTAGE: Despite the fact it was another year of drought, the 2014 growing seasonoffered near-perfect conditions. A warm January and February resulted in an early bud-break, and was followed by a dry spring and a summer with few heat spikes. The early, long and warm season allowed our fruit to fully develop creating a wine that is rich and balanced.
THE CRAFTING: The early morning hours of October 7th were the perfect time to harvest our grapes. Arriving at the winery, the fruit was de-stemmed and moved to tank for a slow fermentation which lasted 13 days. The wine was then drained, pressed, and moved to barrels. 60% new French oak barrels were used and the wine was aged 18 months before bottling and cellaring.
THE TASTING: Aromas of cedar, oak, leather, black fruit, and baked plums jump from the glass of our 2014 Huge Bear Cabernet Sauvignon. A perfect blend of sweet and savory awaits the palate, with notes of black raspberry, ripe pomegranate, lush oak, and a hint of sweet Panettone on the finish. THE PAIRING: This hearty wine will pair nicely with game dishes; lamb curry; duck with plum sauce; or mushroom risotto.
