THE VINTAGE: The growing season of 2014 was another drought year for California. A mild winter and spring were followed by a moderate summer, leading to even ripening, and intense, flavorful fruit.
THE CRAFTING: Fruit for our Ursa Gigantes was harvested over several days in September 2014. In the cool, early-morning hours, the fruit was first cold soaked before undergoing nearly two weeks of fermentation, with gentle twice-daily pumpovers. The wine was then moved to a blend of 30% new French oak and 70% one- year-old French oak. After aging in barrel for 21 months, the wine was bottle aged for an additional eight months before release.
THE TASTING: Our 2014 vintage is a bold Cabernet Sauvignon focused blend with lifted notes of boysenberry and blackberry on the nose, accompanied by a nice framework of cedar. THE PAIRING: This big, hearty wine will pair nicely with grilled meats; fettuccine Alfredo; and aged cheddar cheese.
