Cabernet Franc’s wild growing habits require constant attention and training during
the growing season. It benefits from a long hang time on the vine to insure a ripe
tannin profile. Our 2016 vintage is complex and intense, driven by red raspberry,
nutmeg and chocolate flavors with hints of black pepper.
Our 2016 Cabernet Franc was fermented in an open top tank and closely monitored to
preserve aromatic complexity while downplaying rugged tannins. The sturdy framework
of this wine encouraged long aging—22 months in 50% new French oak.
Pair it with classic French fare such as Chateaubriand or
cassoulet, or with wild game dishes featuring pheasant, venison or elk.
